Onto the bites. I guess I’m on a bite kick since my last two recipes have been balls and cups. These recipes reminded me how easy bites can be when serving a crowd and how fun they can be when cooking with little ones.

A lovely family member of mine makes amazing spinach balls that I absolutely adore. After taking a close look at the recipe, it’s no wonder I adore these butter balls – they’re packed with loads of butter, salt and cheese. I still plan on munching on these occasionally, don’t get me wrong, but I wanted to make a healthier rendition that I could prepare on a regular basis.

Recipe notes: If you’re not a fan of arugula, feel free to use 8 ounces of baby spinach only. These bites are best hot and eaten fresh out of the oven (but leftovers can be frozen). I like to dice up some grape tomatoes and throw them on top of the bites with balsamic vinegar lightly drizzled on top. Hope you like them!

  • 1/4 cup water
  • 4 ounces raw baby spinach
  • 4 ounces raw arugula
  • 1/2 cup finely chopped green onion
  • 2 tablespoons finely chopped cilantro
  • 2 garlic cloves finely chopped
  • 3 eggs or flax eggs
  • 2 tablespoons olive oil
  • 1 1/4 cup panko bread crumbs or gluten-free crumbs
  • 1/4 cup nutritional yeast
  • 1/4 teaspoon fine sea salt
  • balsamic vinegar to drizzle
Servings: bites
  1. Preheat the oven to 375F.
  2. In a large skillet over low heat, place water and spinach and cook for 2 minutes. Add arugula and cook for another 2 to 3 minutes or until wilted, tossing occasionally. Remove from heat.
  3. In a large bowl, combine arugula and spinach with all remaining ingredients (green onion through sea salt). Mix until well combined.
  4. Shape mixture into 1-ounce balls and place on a baking sheet, about 2 inches apart.
  5. Bake for about 12 minutes. Drizzle with balsamic vinegar and serve warm.

    Those are so cute! And sound delish. I was watching something last night where a chef substituted bread crumbs with quinoa. I wonder if that would work in these?

    These are such a good idea. I don’t think I’d miss the butter, salt and cheese from the original recipe. I like your suggestion to eat these with tomatoes and balsamic vinegar, too.

      Haha, there is certainly an obsession for balls going around the blog world….these look fabulous!

      Have you ever tried Korean shiso? We call it ggaen-yip…it’s fragrant and very very nice as a wrap for bbq meat, or just soaked into a broth.

    what an interesting canape! love it. my favorite green is spinach and then basil comes in at a very close second. spinach is great because it’s kind of flavorless and you can do whatever you want with it, but it’s packed with nutrients, so i love to stick everywhere i possibly can!

    I love that these are baked, not fried and the coriander & rocket is a nice change from spinach. My favourite herb is coriander(cilantro) mixed with green chilli, which I think would be lovely in these, with a squeeze of lime instead of the balsamic. Do you think it would work with frozen spinach I’m always a bit worried that it’s so wet! Off to buy some panko, thanks!!

      You’re so right. It definitely needed an acid which is why I opted for the balsamic but I bet the lime would work beautifully. And love the idea of green chili. Let me know how it comes out if you try it! Thanks for reading :-)
