Guacamole Wonton Cups

Super Bowl Sunday is right around the corner. February 6th to be exact. Green Bay Packers versus Pittsburgh Steelers. My last blog post was dedicated to my godmother. It’s only natural I dedicate this post to my godfather. The Pittsburgh Steelers are my godfather’s favorite sports team of all time. He’s a fanatic. His still regularly wears his Steelers hat I gave him for Christmas twenty years ago. I’ll be rooting for your team, Joe, and thinking of you this Super Bowl Sunday. If you’re not into football or don’t care for Super Bowl, these easy, entertaining appetizers are great for any occasion.

WONTONS: You might be able to find gluten-free wonton wrappers at a natural health food store or online but if you can’t, you can make your own. Here is a simple recipe for Gluten-Free Homemade WontonsHappy Super Bowl!

Guacamole Wonton Cups
Serves: 4
  • 8 wonton wrappers (gluten-free recipe above)
  • ½ avocado, finely chopped (about 2 ounces)
  • ½ cup grape tomatoes, quartered
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon fine sea salt
  1. Preheat oven to 350F. Spray a mini-muffin pan with nonstick cooking spray.
  2. Gently press wonton wrappers into muffin cups. Bake for 7 minutes or until lightly golden.
  3. In a small bowl, combine avocado, tomatoes, chives, lemon juice and salt and mix well. To assemble cups, spoon in about 1 teaspoon of mixture. Serve immediately. Enjoy!

        We have some major Steeler fan friends – so they’re ecstatic! Our team (the Patriots) aren’t there, but we’ll still be attending several Super Bowl parties and I love every one of these wonton cups!       Trish, these wonton cups are so bright and festive. There’s a flavor combination to suit everyone–I love that. I like them all but if I HAD to choose, I would go for the caramelized onion, gorgonzola and walnut ones. I can’t resist gorgonzola!

    Wow, congrats on your top 9 today, its easy to see why it was picked, its beautiful!
    Those are some really great fillings for those cups, and you really could do so many others, what a wonderful idea. I hear the stars are aligned for Pittsburgh and Big Ben this year, everything is coming up 7’s for them, your godfather may have a very good day!

    I love your variations! Have you tried the wrappers for dessert? I just brush them with coconut oil, sprinkle with cinnamon and sugar, and pop them in the over for a few. I bet they’d also be great stuffed with seasonal fruits and some ricotta.

    I love the avocado + tomato grape ones. If I could, I’d have one right away. (Or rather two.) Oh, and I wouldn’t reject the Gorgonzola/caramelized onions/walnuts either :)

    I love little wonton cups!! I made some a few weeks ago, but used a different filling. I’m so excited to have more fillings. The cups are so easy to make and I love the “crunch”. I’m all over these!! Nicely done, Trish, and congrats on the Top 9!

    I love this idea and these combos sound right up my alley! Almost makes me want to go watch the Superbowl…I said almost. I’d probably just whip these up at home and eat them by myself while everybody else cheered for…whoever’s playing the football game.

    Great minds… I was thinking of doing wonton cups as well. We’ve made them once before, using a Thai chicken salad filling that was made from pulled roasted chicken, scallions, sesame oil, fish sauce, lime juice, roasted peanuts, slivered cabbage, and a couple other things. Quite tasty and fun to eat. It was just my fiancée and I at the time, but I can imagine these going over well with a crowd! And you have some really delicious fillings here.

    These are beautiful. I vote avocado/tomato but that’s just be, an avocado addict. I love that your grandfather is such a fan. Sadly our teams (giants and saints) are out but that may make the superbowl less celebratory.
