Chocolate Chip Cookie Dough Bites

Beware – Chocolate Chip Cookie Dough Bites are delicious and addicting.

Who doesn’t love raw cookie dough? Something about the chewy, moist texture and pronounced flavors that make the dough too tempting…mmmm.

I’m using this recipe for an upcoming Holiday Cookie Exchange. I had to share with you because they’re not only delicious, they’re easy to make {no-bake} and use natural ingredients. Here goes. Hope you like them.

Chocolate Chip Cookie Dough Bites
Serves: 24-28 bites
 
Ingredients
  • 1⅓ cup raw cashews
  • 1⅓ cup raw walnuts
  • 1⅓ cup old fashioned oats (be sure to use certified gluten-free if needed)
  • ¼ teaspoon sea salt
  • ⅓ cup agave nectar (I used slightly less)
  • 1 teaspoon pure vanilla extract
  • 5 tablespoons cacao nibs or vegan chocolate chips
Instructions
  1. In a food processor, combine cashews, walnuts, oats and salt and process into a fine meal. Add agave and vanilla and process for another 15 seconds or until moist. Add chocolate chips and pulse to combine.
  2. Roll dough into balls, about the size of 1 tablespoon per ball. Run your hands under water if you experience dough sticking to your hands. You may need to squeeze the dough bites a little so they bind.
  3. Place onto a cookie sheet lined with parchment paper. Freeze for 15 minutes or refrigerate for 45 minutes so the bites set, and serve chilled.
Notes
I tried using a blender instead of a food processor and the result was very different. A food processor is highly recommended.
