A sweet treat that’s easy to make and uses simple ingredients. With these dark chocolate clusters, you really only need two ingredients – nuts and chocolate. Whatever nuts you have on hand will do fine, although some work better than others. I like to add seeds too. I use mainly walnuts with almonds and then top the dark chocolate with pumpkin seeds. One variation is to add dried cherries.
I want to start incorporating more seeds into my cooking. Why? Well, for starters they add great flavor and texture. They may be small but they are sooo nourishing. Pumpkin seeds are packed with iron, zinc, manganese, magnesium and phosphorus. In just one ounce, pumpkin seeds provide 7.5 grams of protein. Because of the essential fatty acids they contain (omega-3s), they help promote brain and heart health. By the way, did you know that 1 ounce of sesame seeds has just about the same amount of calcium as 1 cup of milk? More details here. Because nuts and seeds are little nutrition powerhouses, they should be eaten in moderation, about 1- 2 ounces per day is recommended.
Enjoy these healthy sweet treats
- 2 ounces raw walnuts
- 1 ounces raw almonds
- ½ ounce shelled raw pumpkin seeds
- 3.5 ounces vegan dark chocolate (at least 60% cacao)
- pinch of salt (optional)
- Line a baking sheet with a piece of wax paper. Begin assembling each cluster by gathering 4 walnut pieces and 2 or 3 almonds per cluster. Place on baking sheet, ensuring pieces are compact so they will stick together easily.
- Place chocolate in a medium-sized bowl and microwave on high for 1½ to 2 minutes (or you can use a double boiler). Stir chocolate to make sure it has melted evenly.
- With a small spoon, drizzle melted chocolate onto clusters. Sprinkle 5 to 10 pumpkin seeds per cluster on top of melted chocolate and add a pinch of salt (optional). Place clusters in freezer for at least 20 minutes to set. Enjoy!
