I am teaching my second cooking class in a few weeks with a couple of my colleagues. I am equal parts anxious and excited. Will the participants have fun? Will they like the recipes? Will they learn something new?

The class is on Valentine’s Day so we’re trying to work in some red/pink dishes. Of course I immediately thought of beets. Here are some beet recipes that caught my eye. Don’t they sound yummy?!

beet, grapefruit and mache salad, kitchen confidante

borscht, eating well

purple velvet torte, elana’s pantry

In other news, I’m training for a half marathon, one of my New Year Resolutions! I am starting off pretty slowly though… the cold I got over Christmas really took a toll on me. I’m finally getting my energy fully back. Phew.

A good friend of mine who is a triathlete (or as I like to call her, triathloner) offered me a few tips in training for my first half marathon. She referred me to this website for a half marathon training guide for beginners. They also have intermediate and advanced training guides for half marathons as well as guides for other trainings.

My friend also advised me to get myself a great sports bra because I may chafe on long runs and it will hurt. She’s a big fan of Under Armour clothes and bras and Thorlo socks in case you’re interested.

    Beets for Valentines Day! So cute. Gosh, I can’t believe I have not roasted beets yet these season. I love the yellow ones! Teaching a cooking class sounds scary, I did a demo once and it was totally nerve racking but so gratifying at the end. Everyone seemed genuinely interested and asked great questions, and the best part is that they get to eat at the end, which always makes people happy. I look forward to seeing some of your cooking class recipes. Good luck with the half marathon training! I did the one in Santa Cruz last year, SO MUCH FUN!

    I love beets but have a very small collection of recipes for them. I think I always just roast them.  Will be looking at the recipes you are crushing on for inspiration.  

    And way to go on the half marathon.  I fear that the next time we run together you will spend more time waiting for me!

    I haven’t made anything with beets in too long!  I did make some cute mini bundt cakes with them and they came out nice and pink :)   Good luck on your 1/2!!! That’s awesome

    I love beets now, but couldn’t stand them as a kid.  The roasted beet soup sounds fabulous and I’m intrigued by the purple velvet torte-you’ll have to let me know if you like it!  I’ve done several half marathons in the past, although my races those days are limited to 5K’s to avoid injuries.  Best advice-you really don’t need to do anything longer than 8 miles for a long run in preparation!  Have fun training :-)
