
I love onions. I do. But I especially love caramelized onions. Once in a while, I find myself with too many onions and this dish is the perfect cure – Sweet Onion Confit. I understand if it doesn’t sounds that appealing to you. But I am telling you this dish is so delicious – it could practically be dessert. Although, I usually serve this dish as an appetizer or side.
I usually serve it in very small cups accompanied by carrots for dipping or just spoons (it’s that good).
Sweet Onion Confit
6 yellow onions (or sweet onions)
3 tablespoons olive oil
1 tablespoon butter
1 tablespoon sugar
2 teaspoons ras el-hanout
Cut onions finely. Add onions, butter and oil to saucepan. Brown them on low heat. Add sugar to saucepan. Cover and cook until caramelized slightly (about 20-25 minutes), mixing occasionally. Remove pan from heat, add onions and ras el-hanout to food processor, and blend until smooth. Enjoy!
